HALAYANG UBE (PURPLE YAM)

Ingredients
4 pounds ube (purple yam), fresh or frozen
4 cups coconut milk
1 can condensed milk
1 teaspoon salt
1 teaspoon vanilla

Procedure

Boil the ube in a big pot of water and cook for about 15 minutes or until tender. Let cool.

Mash ube with a potato masher or ricer. In a big wok, put the mashed ube, coconut milk, condensed milk, butter, and slowly cook over medium-low heat until it thickens and liquid has evaporated. Add salt and vanilla and continue cooking on low heat until it becomes very thick.
