PEAR PIE
Ingredients
4 firm ripe fresh pear, pared and sliced thinly
1 unbaked pie shell (previously made and cooled in the refrigerator)
1/2 cup brown sugar plus extra for sprinkling on uncooked pie shell.
1/2 cup granulated sugar
3/4 cup all-purpose flour
1/4 cup melted unsalted butter
2 eggs
1 teaspoon salt
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1 teaspoon grated fresh ginger (or ground powder)
1/2 teaspoon cinnamon

Procedure:

Set oven to 375 degrees F. On a cookie sheet, shape your pie shell into a big square by cutting four sides and folding in about 1/2". Brush with butter and sprinkle with brown sugar with 1/2 teaspoon cinnamon. Arrange each sliced pear in the four corners of the pie shell by laying whole sliced pear and pressing/pushing sliced pears on one corner (like a domino). Fill center of pear with sliced pear. Cut to fit if necessary. Mix sugar, flour, and melted butter, eggs, lemon juice, vanilla, ginger, until smooth and pour over pears. Bake at 375 degrees F for 15 minutes and bake at 350 for 45 minutes until light brown. Let cool 30 minutes before cutting.
