CRYING TIGER BARBECUE

Ingredients
3 Rib Eye or New York Strip Loin  1/2 thick cut steaks
1/2 cup Thai sweet soy sauce (Pantai brand)
1/2 cup Thai fish sauce (nam pla)
1 tablespoon freshly minced garlic (optional)
1 tablespoon freshly ground blackpepper (optional)
1/4 cup fresh lime juice
2  tablespoon hot chilly peppers - chopped (add more if you like)


Procedure
Marinate the steaks in the soy sauce, fish sauce, fresh lime juice and chilies for at least one hour. Barbecue in live charcoal or gas grill for about 1 minute on each side on high heat and 3 minutes on low heat each side for medium rare. Let sit for ten minutes before serving.

*Serve with the Crying Tiger Sauce.
