10 to 12 small fresh oysters, shelled
1 cup fresh small shrimps, shelled and deveined
1 cup bean sprouts
1 cup sweet potato, cut into strips
1/2 cup Chinese chives, cut 1 1/2"
1 cup sweet potato starch
1 teaspoon freshly ground black peppercorns
1/2 cup or more cooking oil
1/4 cup cilantro tops
2 stalks green onion, cut into 1 1/2"
1/8 cup red vinegar

Mix the oysters, shrimps, bean sprouts, sweet potato, chives, sweet potato starch, and freshly ground pepper in a bowl. 

Fry on medium-high heat on a pan with small amount of oil for about 2 minutes on each side.  Make about 3 to 4 inches wide oyster pancakes. Transfer to a serving dish and top with cilantro. Use red vinegar as dipping sauce.  

Enjoy as a side dish!
