1 pound lean ground beef
1 can Refried Beans
1 packet Taco seasoning
1 head iceberg lettuce - (sliced thinly or julienned)
1 big white onion - chopped finely
8 roma tomatoes - chopped finely
1 packet cheese taco or 1 lb queso fresca
1 packet hard taco shells or soft taco shells
Freshly Made Taco Sauce (see recipe in my website)
1 teaspoon salt
3 tablespoons olive oil
In a pan or skillet, put olive oil and brown ground beef until meat is cooked and no longer pink. Add the taco seasoning and mix well for 2 minutes. Add the refried beans and mix well. For hard taco shells: heat oven to 350 F degrees and lay each taco shell in a cookie sheet and bake for 3 to 4 minutes. For soft taco shells: put a few taco shells in a container with a wet damp cheesecloth or paper towel and microwave on high for 1 tminute.
*Serve with corn tortilla chips with salsa.
