Mexican Corn Chips

1 packet of 6" Corn Totillas (buy from Mexican store)
Cooking Oil


Cut the round Corn Tortillas with scissors in half, and then cut the 1/2 to 1/2 making 4 pieces out of the 1 round corn tortilla

Deep fry in oil at 375 F degrees until golden brown.

Remove cooked corn chips and put on a paper towel lined container to drain the oil.

*Serve with freshly made Mexican Salsa

Freshly Made Mexican Salsa

8 Roma Tomatoes, wash well, remove seeds, and chop.
1/2 cup cilantro, wash well and dry with paper towel and chop or cut 1/2".
1 red onion, chopped well.
2 limes
1 Jalapeno pepper - remove seeds and chop well (use according to taste)


Mix all ingredients in a bowl. Squeeze limes over mixture.

Freshly Made Taco Sauce

4 medium sized raw tomatoes (to make tomato puree)
2 cups water
1/2 chopped medium white onion
8 whole heads of garlic (to make garlic puree)
1/2 cup cooking oil
1/4 cup white vinegar
4 tablespoon dried oregano
1 teaspoon salt
4 crushed Japanese chiles (use according to taste)
crushed tomatoes

How to make Fresh Tomato Puree
Wash 4 medium-sized tomatoes well in running cold water. Slit the tomato skin underneath with a sharp knife. Bring water to a strong boil and drop the tomatoes for 1 minute. Immediately remove and place in a bowl with cold water. Peel away the skin and core the tomato. Cut tomatoes in half crosswise and remove seeds by scooping with a teaspoon. Put in a blender or food processor and puree. Bring to a slow boil in a pan for 25 minutes, removing with a spoon any excess water on top. Add 1 tsp salt if desired.

How to make Garlic Puree
Peel all cloves from 8 whole garlic and puree in a blender or food processor. Add 2 cups water and blend. Mix all ingredients and adjust taste.

Ground Beef Tacos

1 pound lean ground beef
1 can Refried Beans
1 packet Taco seasoning
1 head iceberg lettuce - (sliced thinly or julienned)
1 big white onion - chopped finely
8 roma tomatoes - chopped finely
1 packet cheese taco or 1 lb queso fresca
1 packet hard taco shells or soft taco shells
Freshly Made Taco Sauce (see recipe in my website)
2 limes
1 teaspoon salt
3 tablespoons olive oil

In a pan or skillet, put olive oil and brown ground beef until meat is cooked and no longer pink. Add the taco seasoning and mix well for 2 minutes. Add the refried beans and mix well. For hard taco shells: heat oven to 350 F degrees and lay each taco shell in a cookie sheet and bake for 3 to 4 minutes. For soft taco shells: put a few taco shells in a container with a wet damp cheesecloth or paper towel and microwave on high for 1 tminute.

*Serve with corn tortilla chips with salsa.
