Green Chicken Curry

Ingredients
1 boneless and skinless chicken breast, sliced thinly, 2" X 1" X 1/4"
1/2 cup bamboo shoots, sliced about 1/4 inch
3 slices Galangal
1 stalk lemongrass, bruised and cut diagonally about 2 inches
2 Kaffir leaves, bruised, vein removed
1/8 cup palm sugar
2 tablespoons fish sauce
2 tablespoons green curry paste
2 cups fresh or 1 can coconut milk
1 cup chicken stock
